Today I have another Blue Apron meal to share with you all; a gorgeous spiced chicken breast with mashed potatoes and a blue cheese-kale salad!

I cannot tell a lie, I am somewhat of a mashed potato fien; I sometimes have mashed potato cravings and I can NEVER resist a helping, if it is ever an option (idk, I just LOVE mashed potatoes). So when I took a look at this recipe, I'm sure you can only imagine my excitement when I saw that mashed potatoes were part of the meal.

Spiced Chicken Breasts & Mashed Potatoes with Blue Cheese-Kale Salad


Everyone who is familiar with my eating habits, knows that I am not really a "meat eater". Yes, I do in fact consume meat, but I do not particularly care for that source of protein very much. So while the spiced chicken breasts, in this particular dish, were great, they were not the star of this dish for me (I really didn't give it much of a second thought...).


Instead, I found myself more wrapped up in the blue cheese-kale salad and, of course, the mashed potatoes. I typically run far, far away from blue cheese, but incorporating it into the dressing for the kale salad turned out to be surprisingly delicious. The blue cheese taste was actually quite subtle, which shocked me because I assumed it might have overpowered the sour cream and drizzle of milk in the dressing, but it was actually beautifully balanced. 


As for the mashed potatoes, they might have been the best I've ever had- a very simple, classic recipe, but done right (soo right). I think bel paese cheese is the ingredient I have been missing my entire life, but never knew I needed. It gave the mashed potatoes the most gorgeous creaminess, without compromising the flavour. I have literally been replicating this specific recipe every single time I have made mashed potatoes since having this dish because it's just THAT GOOD!

I'm the type of mashed potato lover who, in my opinion, really doesn't ask for much. I don't need to be wowed with some new innovative or deconstructed take on an already perfect dish. All I ask is that my mashed potatoes be well seasoned and creamy (I don't even mind it being a little lumpy so long as the flavour is there), which I don't think is asking for very much; yet, so many people still find some way to mess up a seemingly basic, simple dish. So while this may seem like/be the absolute, most basic mashed potato recipe you have ever tried, when you were expecting some new, never-before-seen spectacular recipe, I'm sorry to disappoint. But what can I say; I'm a simple gal' who likes her simple mashed potatoes.


I think I would give this dish a 10/10 solely based on how much I enjoyed those mashed potatoes (as I sit here wondering why I didn't make the title "Mashed Potatoes- My One, True Love"), but as always, I am curious to know your thoughts if you have ever tried this recipe from Blue Apron, or even if you have tried this specific recipe for mashed potatoes. And feel free to share any other recipes that you think would send me into a food coma; you know I'd love to test them out!
